Watercress
(Nasturtium officinale)
Family: Cruciferae
Native to Europe and Russian Asia, Watercress is a hardy perennial European
herb (Nasturtium officinale) of the mustard family. A hardy perennial
found in abundance near springs and open running watercourses, the plant
has a creeping habit with smooth, shining, brownish-green, pinnatifid
leaves and ovate heart-shaped leaflets. It is used in salads, and is
often added to soups in China, for its flavor. Another use includes
chopping finely, maceration with salt to remove excess water, and quickly
stir-fried.
