Lemon
Balm
[also Lime Balm]
(Melissa officinalis)
Family: Labiatae
The fresh leaves of lemon balm release a lemon flavored oil when squeezed.
A tea can be made from the dried leaves. Citronella is the most fragrant
variety available, and has double the oil content of other varieties.
A variety known as lime balm has a scent closer to lime. Fresh chopped
leaves are also interesting in salads, soups and stews.
