Kokum

Family: Guttiferae
Native to the western coastal regions of southern India, but rare outside this area. In India it is used in the regional cuisines of Gujarat Maharashrta and other southern states where glasses of kokum sherbet are consumed during summer months. Dark purple to black, sticky with curled edges, the Kokum fruit is usually halved and dried, so the dried seeds are visible in their chambers like a citrus fruit. Kokum is found as a dried rind, resembling a thick plum skin. It gives a pink to purple color and sweet-sour taste when added to food. The aroma is slightly sweet and sour, with a refreshing sour taste, slightly astringent flavor.
