The fragrant leaves and dark green rind of kaffir limes are used in
Thailand and other South East Asian countries to add flavor to dishes.
The tree is small, about 9 to 18 feet tall. Few Thai soups and curries
would be complete without the delicious zesty flavor of kaffir lime
leaves. The clean floral aroma gives a distinctive flavor to both chicken
and fish dishes.
