Kaffir Lime
[also Thai Lime or Thai Bai Makrut]
(Citrus hystrix)
Family: Rutaceae
The fragrant leaves and dark green rind of kaffir limes are used in Thailand and other South East Asian countries to add flavor to dishes. The tree is small, about 9 to 18 feet tall. Few Thai soups and curries would be complete without the delicious zesty flavor of kaffir lime leaves. The clean floral aroma gives a distinctive flavor to both chicken and fish dishes.
