Celery
[also Wild Celery]
(Apium graveolens)
Family: Umbelliferae
Native to Europe, the fresh ribs and leaves, or seeds of this plant
used in cooking to flavor soups and stews. Its taste is aromatic, warm,
and slightly pungent. Celery should be distinguished from Celery Seed,
typically the seeds of lovage, a wild type of celery, with seed that
has a strong, somewhat bitter flavor that carries the familiar celery
aroma (see Lovage).
