Camboge
(Garcinia gummi-gutta)
Family: Clusiaceae
Grown in India, Garcinia the "camboge tree" is a good-sized
glabrous and evergreen tree belonging to the family Clusiaceae and known
under the scientific name, Garcinia gummi-gutta. The economic part of
the plant is its mature fruit which are highly acidic. Separated fruit
rind is first sun dried and then either smoked or oven dried, and in
order to increase the storage life and impart softness the dried rind
is mixed with common salt and coconut oil. The processed rinds of the
ripe fruit are used as a condiment in fish and prawn preparations to
impart flavor and taste as well as to improve the keeping quality. It
has only recently attained international significance.
