Burnet

Sanguisorba officinalis
(Syn Poterium sanquisorba)
Family: Rosaceae
Native to Europe, Burnet grows in moist meadows and shady places, chiefly
in mountainous districts,. An herb with odd-pinnate stipulate leaves
and spikes of apetalous flowers. The nut-cucumber flavor of its leaves
are used in salads with French dressing or mayonnaise. Also used in
soups, casseroles, herb vinegars and cream cheeses. A member of the
rose family.
