Alfalfa
(Medicago sativa)
Family: Papilionaceae
Originated in the Near East and now widely cultivated there and around the world for forage. Arabs called it the "father of herbs." Alfalfa's roots grow as deep as 20 feet or more, providing the plant with a rich source of nutrients not always found at the ground's surface, including all eight essential amino acids. Because Alfalfa is rich in easily assimilated vitamins (A, D, B, E, K, U), minerals and trace elements, with an infusion of mint it is an excellent nutritious tea for daily use. Alfalfa sprouts are also very popular in sandwiches and salads.
